Pasta Madre Day 2014!!! / Sourdough Day 2014!!!

Io ho adottato la pasta madre diversi anni or sono, poiché l’ho conosciuta grazie ai laboratori di Mani Tese realizzati dalla cara amica Grazia, che me ne ha regalata un po’.
I adopted the sourdough several years ago, knowing it thanks to the workshops of Mani Tese made by dear friend Grazia, who gave me a bit.



La mia "Bina", appena rinfrescata.

Ed eccola qua la mia “Bina” (chiamata così in onore di mia nonna”), con cui impasto due/tre volte alla settimana ottime pagnotte di pane e poi di tanto in tanto, taralli, cornetti, “flauti”, pizza e focaccia.
Ormai è una dipendenza per noi e più il tempo passa, più il suo potere lievitante cresce e il sapore di ogni cosa sfornata migliora.
And here it is my “Bina” (so named in honor of my grandmother), with which I mix two/three times a week good loaves of bread and then occasionally, bagels, croissants, ‘whistles’, pizza and focaccia.
Now it's an addiction for us and the more time passes, the more its leavening power grows and flavor of baked food everything improves.

Peccato domani non poter partecipare direttamente agli eventi in corso (di cui potete trovare la mappa qui, anche se non tutti sono registrati). Non sono riuscita ad organizzare nulla qui da me e gli eventi non sono proprio dietro l’angolo, ma una cosa è certa: sicuramente a tavola ci sarà il pane di grano duro, ovviamente fatto con la mia pasta madre!!! ;)
Too bad tomorrow I will not be able to participate directly in the events going on (which you can find the map here, although not all are registered). I failed to organize anything here by me and the other events are not just around the corner, but one thing is certain: there will be definitely wheat bread at the table, obviously done with my sourdough! ;)

Eventi passati e futuri / Past and next events

Rieccomi qui! Non voglio far passare questo mese senza farvi avere notizie di me!
Here I am again! I do not want to pass this month without getting to hear news from me!

Come sempre i giorni volano e le cose da fare sono sempre tante, lavoro in primis, però il blog è sempre fra i miei pensieri, soprattutto quando succedono certe cose che vorrei tanto condividere con voi. Mi spiace solo di esser costretta a condividerle quando sono ormai passate, ma non preoccupatevi, ho qualche evento pronto per voi!
As always, the days fly by and things to do are always many, working first, but the blog is always on my mind, especially when certain things happen and I'd love to share them with you. I only regret being forced to share when they are past, but do not worry, I have some events ready for you!

L'ultimo di cui voglio darvi solo qualche flash è stato venerdì scorso. Una festicciola insolita che sa di "swap" – e la mia amica PeSte non me ne voglia ma non resisto ad usare questa parola ;) – e di retrogusto natalizio.
Con le amiche volontarie di Mani Tese abbiamo organizzato una tombolata riciclosa, un "Ritombolone" per stare insieme alle persone che hanno prestato il loro tempo all'iniziativa dei pacchetti in questa libreria e ringraziarle, divertendoci a riciclare ciò che di Natale non è stato "digerito"... già, quindi, panettoni, torroncini, vini e dolcini vari come ristoro e tanti tanti regali di cui ciascuno di noi voleva fare a meno, perché già in possesso, perché non adatto al guardaroba o perché non proprio corrispondente al proprio gusto, assegnati come premi.
The last I want to give you just a few flashes occurred last Friday. An unusual party, a sort of "swap" – my friend PeSte must forgive me but I can not resist using this word ;) – and something with an aftertaste of Christmas.
With volunteers friends of Mani Tese we organized, the "Ritombolone" (a swap bingo) to be with the people who have given their time to the initiative of the packages in this library, and to thank them, having fun and swapping that on Christmas was not "digested"... yes, so, panettone, nougat, wine and sweets as various dining options and many, many gifts
awarded as prizes. Things that each of us wanted to give away, because already had, because they do not fit the wardrobe or because don't match your own taste.



C'è da dire che ci siamo proprio divertiti!!!
Io e Irish abbiamo realizzato il tabellone riciclando dei vecchi manifesti di un evento musicale ormai passato più di cinque anni fa (ne abbiamo ancora un sacco!). Poi io ho creato un festone con le carte da regalo metallizzate, seguendo questo suggerimento e per il ristoro ho fatto un paio di focacce pugliesi, che hanno avuto un grande successo. Abbiamo contribuito anche noi con un paio di regali che non avremmo mai utilizzato – meglio non dire però, non si sa mai che il post lo legga chi ce li ha regalati! ;) –.
We had really a great time!
Irish and me made the bingo board, recycling old posters of a musical event of more than five years ago – we still have a lot! –. Then I created a garland with metallic gift cards, following this suggestion and for the rest I made a couple of "focaccia" of Puglia, which had a great success. We also brought a couple of gifts that we would never use – better not to say though, you never know who reads your post, perhaps who gave them to us ;) –.


 

Non neghiamo che ci sono stati attimi di paura, quando ognuno di noi ha temuto di vincere alcuni premi, come i due spaventosi vasi artistici fatti in silicone (se ne vede uno nella foto), di un kitsch folle, che però qualcuno sembra aver apprezzato! 
Quest'anno pare che io sia "fortunata": ho vinto un paio di orecchini "catarifrangenti" (che però torneranno utili d'estate in bici!), uno specchietto in legno a forma di koala, due grotteschi musici indiani in legno (che sono andati a finire al mercatino dell'usato), un romanzo con tema cucina che è stato ceduto alla persona giusta, il mio moroso, il quale a sua volta mi ha ceduto il premio di una tombola, una borsa portacomputer da donna! :)

Insomma, non c'è da lamentarsi!
We do not deny that there were moments of fear, when everyone has feared to win some prizes, like two terrible artistic vases made of silicone – you can see one in the photo –, a kitsch item, but someone seems to have appreciated it!
This year it seems that I am "lucky": I won a pair of
"reflectors" earrings – which, however, will be useful on the bike in summer! –, a koala-shaped wooden mirror, two Indian grotesque wooden musicians (which is gone to the flea market), a novel with a kitchen theme that was given to the right person, my boyfriend, who in turn has given me his lottery prize, a laptop bag for women! :)
In short, there is no reason to complain!




Eventi così ce ne vorrebbero più volte durante l'anno, anche perché il tempo passato assieme e le risate ci hanno dato una bella carica! Da quella sera dovremmo avere anche due volontarie in più!
Chissà, comunque, cosa combineremo con Mani Tese, quest'anno... vi aggiornerò!
I'd like to have more events like these several times during the year, partly because the time spent together and the laughs gave us a real boost! From that night we also have two more volunteers!
I wonder, however, what we will do with Mani Tese, this year ... I will update you!


Intanto vorrei farvi sapere di un paio di prossimi eventi che interessano l'autoproduzione.
Meanwhile, I would like to let you know of a couple of upcoming events about the DIY making.

Domenica prossima, 27 gennaio, al Castello di Sorrivoli, (Roncofreddo di Cesena), dalle 9.30 alle 18.00 ci sarà una giornata dedicata al libero scambio di semi, organizzata dall'Ecoistituto di Cesena, con dibattiti interessanti. Qui trovate maggiori informazioni.
Next Sunday, January 27, at the Castle of Sorrivoli (Roncofreddo Cesena), from 9.30 to 18.00 there will be a day dedicated to the free exchange of seeds, organized from the Ecoinstitute of Cesena, with interesting debates. Here you will find more information.

Il 2 febbraio ci sarà in tutta Italia il Pasta Madre Day, organizzato dalla Comunità del Cibo Pasta Madre. Una serie di eventi in contemporanea proposti e organizzati da varie persone per far conoscere e diffondere la pasta madre, questo lievito naturale sconosciuto ai più. Spero di poter partecipare a quello a me più vicino. Qui la mappa degli eventi già registrati. Se già utilizzate la pasta madre potete anche organizzarne uno e registrarvi qui.
On February 2, in the whole of Italy there will be the "Pasta Madre Day", organized by the Community of "Pasta Madre Food". A series of events simultaneously proposed and organized by various people to know and spread the natural yeast, unknown to most. I hope to participate at the closer one. Il pane di Capodanno / New Year's bread



Questa mattina ho infornato il pane per la cena di Capodanno, fatto con il lievito madre che custodisco da parecchio tempo.
Una bella treccia che ha sparso un buon profumo per tutta casa. Un profumo che mi ha fatto riflettere.
Sì, perché aspettare il Capodanno è come aspettare che il lievito madre faccia il suo corso e che la cottura si compia a puntino.
Non sai mai se la farina era quella giusta, se l’impasto lieviterà abbastanza, se farà la crosta troppo dura, se ci sarà al suo interno una morbida e porosa mollica, se si sentirà l’acidulo o un buon sapore…

Così aspettare il Capodanno… non sai mai se i sacrifici fatti durante l’anno che sta per finire saranno utili nell’anno nuovo, non sai mai se il nuovo anno si presenterà generoso o se porterà con sé momenti difficili ai quali poi magari seguiranno delle belle soddisfazioni…

Comunque sia si aspettano entrambi le cose con curiosità e speranza. Quindi il mio augurio per questo Duemilatredici è che i futuri 365 giorni profumino di soddisfazioni, di emozioni calde come l’amore e l’affetto di chi ci sta vicino, che dietro la spessa crosta, l’asperità delle difficoltà, ci sia sempre un momento in cui ci si possa distendere, respirare e sorridere.

This morning I baked the bread for New Year's dinner, made with natural yeast I kept for a long time.
A beautiful braid that spread a good scent into the whole house. A fragrance that made ​​me think.
Yes, because waiting for the New Year is like waiting for the yeast to take its course and for the bread perfectly cooking.
You never know if the flour was right, if the dough widen enough, if the crust will be too hard, if there will be an internal soft and porous crumb, if you feel the sour or a good taste ...

So waiting for the New Year ... you never know if the sacrifices made during the year will be useful in the new year, you never know if the new year will be generous with you or will bring difficult moments after which then maybe there will be some great satisfactions ...

However you will expect both things with curiosity and hope. So my wish for this 2013 is that the next 365 days will smell of satisfactions, hot emotions such as love and affection of those around us, that behind the thick crust, the roughness of the difficulties, there will be always a moment when you can relax, breathe and smile.

La fortuna dei principianti... dura poco! / The beginner’s luck… is not for long!

Giorni di caldo… giorni non proprio ottimali per tenere il forno acceso, eppure ultimamente ci tocca farlo. Già, perché dallo scorso giugno ci siamo presi un impegno… abbiamo adottato la pasta madre!!!
Hottest days these…  not the ideal for to keep the oven turned on, but lately we must do it. Yes, it’s because last June we were committed to a not so easy task…  we adopted the natural yeast!!!




Nell’ultimo Alternative in Strada – evento che peraltro non vi ho ancora raccontato –, tra i vari laboratori previsti quello più riuscito è stato il laboratorio sull’autoproduzione del pane. La bravissima manitesina Grazia ha fatto una dimostrazione live di come si fa il pane a partire dal lievito madre iniziato da lei stessa, che poi ha distribuito assieme alle pagnotte lavorate.
In the last Alternative in Strada – which event I still haven’t told you –, among the many scheduled laboratories, the most successful one was that on the self-making bread. The clever volunteer of Mani Tese, Grazia, showed how to do the sourdough bread, with the natural yeast she prepared in advance and distribute among the participants with a little loaf for everyone.

È stato lì che abbiamo deciso di intraprendere questa nuova avventura… così è un po’ più di un mese che rinfreschiamo puntualmente il lievito. Finora abbiamo sperimentato il lievito per fare la pizza e il pane. In realtà il compito di rinfrescarlo se l’è preso Irish, che da bravo cuoco di casa poi ha fatto i suoi primi esperimenti di panificazione.
There we decided to start this new adventure…  so since the beginning of last month we started to freshen up the yeast. Until now we experimented the yeast only for pizza and bread. Actually Irish was committed into this task…  he is the home cook, so he did his first baking experiments.

Ma fare il pane è un’esperienza lunga e piena di sorprese…
Le prime volte l’impasto è venuto fuori un po’ mollo e il panetto si è trasformato in una quasi-ciabatta, forse per un tempo troppo lungo di lievitazione (8 ore). Il sapore era un po’ più acido del pane acquistato, ma buono lo stesso.
But baking bread is a long and surprising experience…
The first times the dough was too soft and the loaf became a sort of slipper, perhaps for the longest time for rising (8 hours). The taste was a bit more acid than the bread we buy, but it was good the same.


Strada facendo, comunque, ci siamo accorti di un inconveniente. Il lievito madre va rinfrescato sempre col doppio della farina, come da indicazioni di Grazia. È così che il nostro sta diventando un blob mostruoso!!!
Quindi abbiamo deciso di dare il via ad una serie di infornate più frequenti, che col caldo non sono proprio l’ideale… ma il tutto è per non buttar via il lievito!
E visto che io sono a casa più spesso ho pensato di occuparmene di persona, in modo da poter utilizzare i momenti più freschi della giornata.
Going on we realized that there’s a problem. The natural yeast must be freshened up with the double quantity of flour, as Grazia said. So our yeast is becoming a scary blob!!!
So we decided to star a series of more frequent batches, even if with this heat they are not the ideal.
We don’t want to throw away the yeast!
I am always at home, so I thought to take care of it, using the fresher moments of the day.


Bene, il mio primo esperimento di panificazione è stato un successo! Ho calcolato in maniera precisa tutte le dosi di lievito, farina, acqua e sale e ho ricavato una bella pagnotta da poco più di mezzo chilo. Questa volta l’ho fatta lievitare solo 3 ore e poi l’ho cotta in forno a 230 °C per 50 minuti circa.
Well, my first baking experiment was a success! I precisely calculated all the quantities of yeast, flour, water and salt, then I made a loaf of almost 500 g. This time I gave it 3 hours to rise then I bake it for almost 50 minutes at 230 C degrees.





Classica fortuna dei principianti… il pane sfornato era cotto a puntino, era lievitato bene, era fragrante e persino meno acido di prima!
It was the classic beginner’s luck…  bread was well cooked, risen and fragrant, even less acid than before!

Mi sono entusiasmata a tal punto che ieri, presa dal raptus di dover consumare il blob, prima che ci invadi casa, ho deciso di produrre oltre un chilo di pane!
Ma… la fortuna dei principianti non dura a lungo. Così stamattina ho deciso di tirar fuori le due pagnotte cotte ieri in tarda serata e… che delusione… una crosta troppo cotta durissima e l’interno completamente compattato e crudo!
Eppure ho usato le stesse quantità, ho impastato lo stesso tempo. Ho cotto alla stessa temperatura. Ho fatto solo lievitare il pane un paio d’ore in più. Allora dov’è che ho sbagliato?
E qui chiedo aiuto a tutte voi blogger che avete sempre un piede in cucina!
I was so enthusiastic that yesterday, taken from the fit of madness to consume the yeast, before it invades my house, I decided to bake more than a kilo of bread!
But the beginner’s luck is not for long. So this morning I took out the two loaf baked in the last evening and…  what a disappointment…  a too cooked and hard crust and the inner was completely uncooked!
Still I used the same quantities, I worked the dough the same time. I baked at the same temperature. I left only the bread rise a pair of hours more. Where did I mistake?
Here I ask for an aid to you, bloggers with a foot always in the kitchen.


Forse la temperatura di casa era più calda? Effettivamente la prima volta che ho fatto il pane era di mattina presto… quest’ultima è stata di tardo pomeriggio… boh?
Maybe home temperature was hotter? Yes, the first time I cooked bread was in the early morning, while this time was late evening…  so?

Va be’, vorrà dire che la prossima volta mi dedicherò a quello che mi riesce meglio, come potete vedere nella fotografia in basso… i dolci!
