Pasta Madre Day 2014!!! / Sourdough Day 2014!!!

La locandina dell'evento

Ci siamo quasi, domani, 31 maggio, è il Pasta Madre Day 2014!
Here we go! Tomorrow, May 31, is the Sourdough Day 2014!

Do you know what is this event?
Here a few sentences from the press release issued by the site www.pastamadre.net who is the promoter of the event and where you can find much more information:

“The Sourdough Day is the day in which we celebrate the sourdough. A day to celebrate in the world a new way of living bread. Squares, markets, restaurants, farms, parks and private homes: any place can host the Sourdough Day.
On May 31, there will be an opportunity for everyone to receive the gift of a loaf of sourdough and to exchange dreams, ideas and curiosity about this wonderful way to live their daily lives.”

E poi ancora:
And then again:
“Sourdough is a dough of flour and water in which a fermentation has already started, spontaneously and naturally, thanks to the work of indigenous yeasts and lactic acid bacteria. Added to a mixture of flour and water is able to let it rise for bread, pizza and leavened cakes.
The sourdough makes a wonderful array of aromas and flavors, and especially a higher digestibility and longer storage of bread.
The sourdough never dies: it is kept alive by continuous ‘refreshments’ (dough which is added more flour and water) and can be reproduced and given with great ease.
[The sourdough] is sharing. You can not buy but just to give. It is a gift.
[The sourdough] is a way, not an aim: a way to bring in our daily lives the joy of home-made bread and confidence towards a future of revival and self-producing.
[The sourdough] is a rediscovering: the exchange, the simplicity, the role of producers and not just consumers."

Io ho adottato la pasta madre diversi anni or sono, poiché l’ho conosciuta grazie ai laboratori di Mani Tese realizzati dalla cara amica Grazia, che me ne ha regalata un po’.
I adopted the sourdough several years ago, knowing it thanks to the workshops of Mani Tese made by dear friend Grazia, who gave me a bit.

And here it is my “Bina” (so named in honor of my grandmother), with which I mix two/three times a week good loaves of bread and then occasionally, bagels, croissants, ‘whistles’, pizza and focaccia.
Now it's an addiction for us and the more time passes, the more its leavening power grows and flavor of baked food everything improves.

Too bad tomorrow I will not be able to participate directly in the events going on (which you can find the map here, although not all are registered). I failed to organize anything here by me and the other events are not just around the corner, but one thing is certain: there will be definitely wheat bread at the table, obviously done with my sourdough! ;)

Paola & Kia, vegan per amore, compostatrici per passione! / vegan for love, composter for passion!

For a long time I was planning to write a review for the book I received as a gift at Christmas, “La mia vita a impatto zero” (trad. “My Zero Impact Life” - Mondadori 2012). The time it took to be read would have been even less if it were not for the few and concentrated moments I dedicate to read books, being almost always in front of a screen.
But when I finished reading it, it seemed natural to take in hand and browse a lovely little book, “
Dalle bucce nascono i fiori”(trad. “From veggie scraps to flowers” - Terre di Mezzo Ed. 2013).

These two books are not written by the same person but they have a “silk thread” that connects the two authors, Paola Maugeri and Carmela Giambrone (known online under the name of Kia). I am beginnig to tell you before about this last one.

I know Kia since 2011, when it began to spread through her blog her experiments on DIY compost bin for balconies. As good fellow bloggers we exchanged comments and praises, and I was excited about her “challenge”, doing since long home composting in my garden and explaining it through some composting workshop with Mani Tese, around my city, where many people showed their doubts about the possibility of practicing composting even on their own balcony.
Well, Kia already had the answer to all these questions. She proved to make a do-it-yourself compost bin for balcony easy to build, providing all its know-how in the web and through her own workshops. Over time she has become an expert in composting, so skillfully to explain – in a very simple and convincing way in her book “Dalle bucce nascono i fiori” – the natural process, techniques and secrets to get a wonderful compost, allowing yourself to have an orchard/garden on the balcony of your house, without any discomfort for yourself and your neighbors.
A few pages for a few basic concepts and a few gestures which – if practiced daily as all the habits we have – are always been simple and even fun. Habits that are very good for you and environment!

But what is the bond between Kia and the better known Paola Maugeri?
Paola was a real surprise to me ... I still remember she as host of Videomusic – and MTV then –, as since ’95 I have always been interested in music through a particular passion, having founded and then managed with other people, the fan club and then the Italian website of The Cranberries.
I've always liked the way she shows herself to the public so genuine and sincere, free from the standards – which, unfortunately, the music industry is full – but I never imagined, after all these years, to read a book of hers and love her again and more under a new guise, that of a vegan and a zero impact champion!
But the word “champion” sounds bad, because in her book, “La mia vita a impatto zero”, she doesn’t use to put herself on a pedestal! In fact, I was expecting one of the usual “guide” on how to reduce your impact on environment, doing this or that thing.
I had already seen the episodes of the series, with the same title of the book, the TV show “E se domani” and I expected to find between the lines of the text more or less the same contents. On the contrary this book for me was a real surprise!
Paola tells us about her
zero impact life – or “almost zero”, as she specify after in the book – through her memorable but also painful experiences, through her memories with a scent of Sicily – also because of the delicious vegan recipes that close each chapter – through her meetings with celebrities from the music world – and not only! –, giving us true pearls and letting us discover the intensity and passion with which she seasons every moment of work and everyday life.
Reading this
“journey in her life” made me realize that you should not take anything for granted, that you must take great courage, that sometimes you have to jump and close your eyes to achieve a goal that could be the zero impact, an audition or at least an improvised tango ...
Hers is an ode to life, screaming to the world with the strength of a true rocker and whispered in a ear as the voice of a mother to her child.
Truly a book that is good for the heart, not just for the environment!

PS: Blimey, I did not tell more how Kia and Paola are connected to each other ... so go and find out yourself! ;) You are just in time for Paola’s new book which is already in bookshops, “Las Vegans” ... I cannot wait to have it with me!

Ricettario dei dolci al profumo di… cioccolato! / Cakes recipe holder with a scent of … chocolate!

As promised, I’m here to explain some of my upcycling “creations”. They are not difficult works to do but simple things, often inspired by the shape of the recovered material, sometimes by the type of material, more rarely – as the subject of this post – ... inspired by its scent!

In what was supposed to be a nice weekend with friends and my favorite music – now dating back to last October – and was instead a forced weekend at home, I found myself looking for something to do to relieve the emptiness and melancholy. Often when you are alone at home and some dark thoughts occupy your mind, the best thing to do is to dedicate yourself to something cheerful and satisfying. Sometimes you end up opening the pantry and look for something sweet. In that case, I went there very close but I didn’t find myself drowning my thoughts in chocolate, but – always in the kitchen – I felt the intense perfume that came from an abandoned box of empty cocoa.

The thought flew straight to my partner who was there where I had to be and that was in charge of abandonment, not mine but of the empty box, because he is a large consumer of cocoa for breakfast, the one soluble in milk. Fortunately, the box itself was fairly harmless, because of cardboard and easy to recycle – the one of the famous brand of the purple cow* –, but by opening the lid, I smell the scent of cocoa and thought “a shame to throw it”!

Then it occurred to me that I could make a nice surprise for my love, whose passion is always to cook and often makes sweet surprises to me.
So in addition to the empty box of cocoa, I retrieved colorful cards for origami that I had bought long ago at the
children's flea market – which is held in the summer in Rimini Piazza Cavour and which I talked about in this post – and then double-sided tape and scissors and the image of a cupcake imprinted on cardboard, which accompanied a beautiful box of chocolate eggs had a gift some time ago.

After initially measured how much paper to use to coat the box well – it’s always better to see if it is sufficient, otherwise you need to make a collage – I studied the points where to bend it and began to settle over the strips of double-sided adhesive on which I would patiently glue the paper, trying to take advantage of the paper color pattern. Obviously at some points paper advanced, so I cut away it with scissors, being careful not to damage the cardboard.
The cupcake was just “the icing on the cake”, in short, a decoration that can be done in any other way and material.

Be’ noi qui lo abbiamo sperimentato diverse volte.
The square interior of this recipe holder is well suited to accommodate handwritten or printed cards with your favorite recipes to keep in hand. Otherwise you can save even simple magazine clippings. Nowadays – it is true – it’s easier to consult recipes on the web, but have you ever been annoyed having to wash your hands, dirt of flour or butter every step, having to click ot tap on the recipe in question? Well here we have experienced it several times. Usually we prefer to write recipes from blogs, or refer to classic books or cooking magazines ...

In the end, what I have presented is a simple work, but the thing that sets it apart is always that intense aroma of cocoa that persists in the box and that makes you just wanna sweets ...
That day he was so pleased with the surprise and on his return melancholy was changed in smile. The recipe holder now makes its display on the cabinet where my “house chef” has his magazines and his cookbooks, now inseparable ...

* I would like to specify that this brand of cocoa is normally purchased when on the shelf we cannot find of organic fair-trade cocoa, the packaging of which, however, has several problems of disposal ... In short, there are no half measures!

Fine imprevista di una pagnotta cotta male / Unexpected end of a loaf of bread bad baked

You have probably wondered how I spent the “Sourdough Day”, dating back almost two weeks ago, as I suggested in the last post.
Well, at first I preferred to sink into a “no comment” for the shame of the result.
To be honest, that day for a number of commitments I didn’t bake, devoting my experiments to the next day ... maybe this is why my sourdough was sad and closed on itself as hedgehog. To remember well, at the opening of the jar where I keep it – constantly on the first shelf of the refrigerator –, it “puffed” in the true sense of the word!
In short, it has a proper life of its own and not only ... it also has a temper!
Ok, I tried to cuddle it with my hands and that day I decided to make whole wheat bread, having bought a bag of that type of flour. It was not that long that I made it and sincerely wanted to own a beautiful loaf, golden yellow in color and with a fragrant crust.

In short, for the whims of sourdough or the cold temperature of the day, after about 8 hours the bread didn’t grow at all! But I insisted – you never know if suddenly it could wake up in the oven – and so I proceeded with the cooking as usual ...

The result: a fragrant bread, yes, but a salty brick!!!
Until hot, we tried to chew it a bit. Then it became just impossible.

But I’m worse than a crust of wheat bread! And so I obstinate to try at all costs something to do with that badly baked bread, until I came up with the idea of making “passatelli” a local homemade pasta, which includes the use of breadcrumbs, eggs, Parmesan, nutmeg, lemon zest and salt (in my case there would not be any need).

So last Sunday my revenge was consumed. I took that brick of bread and, with a sharp knife, shredded it and torn it into pieces, eventually in the food processor (alternatively, a grater and a big elbow grease). Then mixed with the ingredients above plus a tablespoon of flour.
I left the dough to rest for a while until I made the vegetable broth, reusing a part of what I had left over from a soup.

But the moment to do passatelli, I had a little of despair: not having the right tool I tried using the mill and a grid with large holes, as suggested by a family friend, but my dough was disintegrating irretrievably. So I decided to turn passatelli in “grattini” – or better big “grattini” another kind of pasta for soup –, and then I immersed them in boiling broth for a few minutes.
Second result: an amazing soup!
Yay, my revenge with the sourdough was consumed and I created a meal without any waste and cheaper than ever!

Ps: you will ask me if it is okay with digestion … Yes, perfect, not for the peppers I ate last night! :D

Salvate le uova!!! / Save the eggs!!!

Easter is gone and who knows how much waste has gone in our trash bins!
You know I hate waste! And these days here at home we have done everything to avoid them.
Luckily on Easter Sunday we were guests of the dear blogger friend Cristella, because there were no seats in trains or buses to go to Puglia (no comment, please!).
So Irish and me had only to prepare the cake (a kind of "dove" made with a mix of two different recipes of Lo) and a quiche of asparagus as a second
vegetarian alternative, since the main courses were already vegetarian (one of the two queen Cristella's princesses has become veg!).
We came back home with a beautiful tray with vegetable lasagne (yum!) remained from lunch that we ate soon. The leftover cake remained until tonight... it is ending up permanently!

Given that we cooked all with fresh ingredients bought at the last minute – selecting the "organic" and the "fair" ones where possible, we expected everything but to have still 11 more eggs after Easter!
They were given away by Irish's aunt, who bought them from a local farmer. These eggs are different, you see... smaller and the eggshell is white! If I'd have known before I boiled and colored them for Easter, maybe with natural expedients as shown in the comments of this old post!
But now what can I do? Moreover they are no longer fresh. Her aunt could not consume them all!

So I make a plea to the entire web to help me to find a happy end to these eggs... a recipe or a suggestion to preserve them still... but please do not let me throw them!

Fa' La Cosa Giusta… in Cucina!!! / Do the Right Thing... in the kitchen!!!

As I promised a while ago, I leave this post to Irish, my companion, you already know as "the home chef", and who had the pleasure to write this report about the "eco-kitchen" laboratory, to which we took part during the saturday spent in fair at Milan.
I want to thank the fantastic Lisa Casali, author of the blog Ecocucina.org and co-author with Tommaso Fara of the book "(Almost) Zero Impact Cooking" [Italian only] for having allowed me to post the images of the laboratory in the slideshow you see here. Their recipes are now usual here at Dandaworld home, we strongly recommend them to avoid waste in kitchen!!! ;)

"Last Saturday 26th March we finally get to go in Milan to visit the fair 'Do The Right Thing', after many past years in which we hadn’t the chance to go for various reasons... and it was really a wonderful experience seeing so many people participating, meeting people. Wonderful was to know the many more or less known realities that in their small world are trying to support a different lifestyle with more regard toward environment, less waste of resources, better use of energy, and so on. A revolution that inevitably, sooner or later, must involve more people, otherwise the future will be increasingly difficult, if not impossible.
Of course one day was too little, despite the fair occupied only two pavilions, but initiatives, meetings and realities were so many to make you aware that you needed more time. But this first experience, albeit with the minutes counted and a constant look at the clock, has been enriched by meeting directly some people we previously met only 'virtually' on the web. One of them is definitely Lisa Casali – author of the food-blog www.ecocucina.org – , known through a cooking workshop which aimed to build capacities of using what are normally considered 'waste': skins, stalks, leaves of fruit and vegetables in general. Surely for my cooking passion was a good experience, also for the chance to experiment – directly with the chefs Lisa and Tommaso, who underlined that they are chefs for passion, not for job – a different way to cook and use all parts of fruits and vegetables. There were many people to follow this workshop, but it was funny the same.
It was so funny to prepare croquettes using the outer leaves and stems of artichokes, and flans using parts of the asparagus stalks that are usually discarded. In addition, we also made a mousse using scrap pieces of cauliflower. The results were really good and in the end we all tasted our own 'culinary creations'...
I got to know the use of “waste” in the kitchen reading the book 'Avanzi Popolo', which I recommend to everyone, but I have to say that cooking together is always very pleasant and enjoyable.
At the same time I also bought the book '(Almost) Impact-Zero Cooking' written by Lisa and Tommaso Fara who collected many recipes which are used in many items that usually end in the brown bin, or in the compost or worse in the unrecyclable waste bin. In the recent days I could not resist and I have prepared two of the many recipes: a carbonara pasta with leeks and as dessert cups of pear, yogurt and biscuits... very good!"

P(R)ESTO!

Nuovi esperimenti, sempre in cucina!
New experiment in kitchen!
This time we needed to balance our gas consumes – especially for cooking bread, that finally works fine now – with some recipes at low energy waste. We try to cook food with fresh and light toppings, using flame only for cooking pasta, rice or barley.

With this heat, our mini-kitchen, with flames on is very hot and lately we are less reasoned to cook… even the home-cook is tired… and that says it all!
So internet helps a lot searching for easy and possibly fresh recipes to prepare quickly.

The premise is that once I assiduously went to the supermarkets and big stores, when I lived in the big chaos of Rome and I usually bought pesto (the Genoese one, the ones from Calabria and Sicily… ). It was one of the mostly purchased product, because it easily solved the problem: “And what I can cook now?”. This was a frequent problem, especially during those weekends when you had to do the thousand things you previously couldn’t do, and you had few time and fantasy for cooking.

But since when I started to live in this more human and green dimension, I tried to learn to make also the pesto!
In facts, last year I did my first attempt with the Genoese pesto and its principal ingredient was the very good organic basil I grew, buying before the sprouts at the local exchange group.

This year I planted the seeds of that basil plant, but the sprouts didn’t grew for the numerous temperature jolts between May and June. It was for the crazy climate, the works in the garden and on the façade of the house, and at last an army of parasites that I wasn’t able to grew anything but strawberries and parsley. But this is another story.

As you can see, this time, things don’t discourage me and I go on with the self-making cooking experiments, buying ingredients from our trusted sellers.
So, today, when I was reading the feeds of the blogs I follow, I looked at Agave Palermo Blog, where my friend Evelin shared her fantastic recipe of a pasta with a pesto that seemed very good!

So I couldn’t resist and tried to make it… delicious! I invite you to try this recipe!
I put the remnant in a vacuum jar, it will be god for another pasta SOS… and believe me, it will end “pResto”! ☺

La fortuna dei principianti... dura poco! / The beginner’s luck… is not for long!

Hottest days these…  not the ideal for to keep the oven turned on, but lately we must do it. Yes, it’s because last June we were committed to a not so easy task…  we adopted the natural yeast!!!

In the last Alternative in Strada – which event I still haven’t told you –, among the many scheduled laboratories, the most successful one was that on the self-making bread. The clever volunteer of Mani Tese, Grazia, showed how to do the sourdough bread, with the natural yeast she prepared in advance and distribute among the participants with a little loaf for everyone.

There we decided to start this new adventure…  so since the beginning of last month we started to freshen up the yeast. Until now we experimented the yeast only for pizza and bread. Actually Irish was committed into this task…  he is the home cook, so he did his first baking experiments.

But baking bread is a long and surprising experience…
The first times the dough was too soft and the loaf became a sort of slipper, perhaps for the longest time for rising (8 hours). The taste was a bit more acid than the bread we buy, but it was good the same.

Going on we realized that there’s a problem. The natural yeast must be freshened up with the double quantity of flour, as Grazia said. So our yeast is becoming a scary blob!!!
So we decided to star a series of more frequent batches, even if with this heat they are not the ideal.
We don’t want to throw away the yeast!
I am always at home, so I thought to take care of it, using the fresher moments of the day.

Well, my first baking experiment was a success! I precisely calculated all the quantities of yeast, flour, water and salt, then I made a loaf of almost 500 g. This time I gave it 3 hours to rise then I bake it for almost 50 minutes at 230 C degrees.

It was the classic beginner’s luck…  bread was well cooked, risen and fragrant, even less acid than before!

I was so enthusiastic that yesterday, taken from the fit of madness to consume the yeast, before it invades my house, I decided to bake more than a kilo of bread!
But the beginner’s luck is not for long. So this morning I took out the two loaf baked in the last evening and…  what a disappointment…  a too cooked and hard crust and the inner was completely uncooked!
Still I used the same quantities, I worked the dough the same time. I baked at the same temperature. I left only the bread rise a pair of hours more. Where did I mistake?
Here I ask for an aid to you, bloggers with a foot always in the kitchen.

Maybe home temperature was hotter? Yes, the first time I cooked bread was in the early morning, while this time was late evening…  so?

OK, next time I’ll dedicate to what I am surely able to do…  as you can see below…  sweets!

P.s.: idee su come utilizzare il pane cotto male? / Any idea on how to use the uncooked bread?

Carciofini 2010: una nuova avventura tra i fornelli / Small artichokes 2010: a new cooking adventure

After the last news that will hold you in suspense (LOL) we come back to talk about our favourite topics.
One of these regards concern the “self-production”, a topic that often I neglect, to say the truth.
Yes, unlike many of you, – by now you know – I’m not a good cook but sometimes I delight to make a mess in the kitchen. On the contrary my beloved Irish is a great chef indeed!
In facts this time I pass the word to him, who will delight you telling about a day spent in the making of… small artichokes in oil!

“Well, I confess to be a greedy glutton of small artichokes in oil… take away all from me but not my small artichoke!!!
So, knowing of my gluttony, last year my aunt gave us some jars of small artichokes in oil that she made herself. After some months we ate them and thought: ‘We foolish! We go on to buy artichokes in oil at the supermarket, while we can well make them at home!’
So here we are at work now, with some glass jars (sterilized and reused), organic sunflower oil, salt, a cauldron and small artichokes.
Of course we bought small artichokes from our friend Andrea, the “poet greengrocer”, who – since we are in Viserbella – provides us weekly with all kinds of fruit and vegetables, almost all local products, grown by local farmers. We trust blindly in him as in his wife Elena, who gave us her personal recipe we proved…
Let’s start now!
The very difficult work is surely to clean and prepare artichokes. In doing it, we saw that we threw away a lot of leftovers and these were mostly the external harder leaves. However they are edible and so we organized to keep the greatest part of the leaves safe, cooking and freezing them. The other ones were thrown in the compost bin and will provide a good compost for gardening!
After having cleaned artichokes – putting them in water and lemon in the meanwhile – we took water to boil with a tablespoon of salt and a glass of vinegar. Then we immersed them and boil for 10/15 minutes. At the end we drained them and pressed in the jars, covering all with sunflower oil.
Then we closed jars and turned them over to create a vacuum packed jar and preserve better the content.
In all this new experience, with almost 100 small artichokes we obtained more than 4 jars. Unfortunately we had to open soon one of them, because the lid didn’t close well (maybe was it only an excuse? LOL).
They tasted yummy and all the day spent in the kitchen was worth, so to have for the next months small artichokes in oil that surely will be better than the purchased ones!
Now we will store more jars for the next year in order to produce more and have the right quantity to assuage my gluttony!!!”

Yes, at last this is reuse, recycle and money saving too! ;)

Lunga vita alla… mia pentola a pressione! / God save… my pressure cooker!

Some days ago I was dealt in an enthusiastic operation for “scraps cooking”, when my pressure cooker – after two years of use – started to puff from the safety valve.
Nooo! I really expected this moment!
Received by my ex-flatmates, as a gift for sharing a new life with my companion, the pression cooker stayed a long time unused. I was a bit terrified to use it, maybe this fear belonged from my mother’s mistrust in technology.
By time, I was moved from my green mood and I took the courage. I read all the instructions and started to use it to cook pulses. I discovered a great versatility of this kitchen tool and so I went on to cook vegetables, soups… saving a great amount of time and energy.

But, let’s come back to tell you of the misdeed.
Seeing this blog post by the good Carla, from Il Clan di Nora Bra blog, I was enlightened by the beauty and perfection of the roman broccoli, which flesh seems designed as computer fractals. Then I decided to buy one at the market, seeing that this is the right season. I was decided to do a good pie as Carla did, even not having moulds like hers. Then I cut the leaves and the core that I should have thrown in the compost bin.

But, first to do it, I thought to pop over a fantastic blog, Ecocucina, suggested by this blog post in Il Bistrot di Lise e Metroicon, a blog full of very greedy recipes that I follow since a little time ago. Collecting all my thoughts, in short the scraps of broccoli went into the pressure cooker. Then I would freeze them and use in a second time for this or that recipe.

So I discovered a full world of scrap cooking. I just remember that the last year I was committed to cook the radishes leaves. I received a lot of suggestions from my blogger friends, especially from the English bloggers. In UK there’s a out and out mania for rescuing and cooking leftovers. Many are the initiatives that come under the slogan “Love food, hate waste”. So, if there’s also an Italian website on the scraps cooking, why don’t we take the benefits?

One of the other ideas I wanted to realize, suggested to use green onion stalks in this soup, cooking it with the pressure cooker. But at the end it refused to collaborate and I had to move all in a normal pot with the lid. Fortunately the soup was done and… very good by the way!

Yuppie!
But I didn’t want to do unless my pressure cooker… it was too much useful for me!
So, last Saturday I took it to the customer care centre for a revision on valves. The safety valve was replaced in a very short time and I had to pay only eight euros. The pressure cooker is safe at home and it’s ready to cook! Yay!

Ricordiamocelo!
Quindi, cara pentola a pressione… rimettiamoci all’opera ora!
So, the moral lesson is: it’s better to repair than buy again!
To the 3 R's we like to recall (Reduce, Reuse, Recycle) we have to add one of maximum importance… Repair!
This is a lesson I learn by my dear friend Almost Mrs Average, and it is a habit we are forgetting.
To repair means to save a lot of resources, energy and emissions, avoiding that an object goes into landfill. We must remember it!
So, dear pressure cooker… let’s restart to work now!
